Hudson has been famous for its bread since long, as the history of Hudson too is long. So, we Inn at Hudson also have a numerous variety of bread but so many of our in-house guests loves to have the uniquely baked and tasty Hudson Bay bread. The name for this bread is given by the Sommers Canoe Base. It was first baked in 1960’s by Base at the Barbara Ann Bakery in Aly. He prepared or baked this unique tasting bread in a convection oven for the first time.

Since then so many bakers have tried baking the similar versions of bread yet this one remains unique and is served by several well-known restaurants in Hudson NY as well as the restaurants in Hudson Ohio (we also serve the bread). The most unique ingredient used in this bread is the rolled oats not the instant oats that gives it a flavory yet salty taste.

Hudson Bay Bread Recipe

Using a food processor will reduce your efforts to a greater extend but if you do not have one, you can try out using a blender, it will take a little time but will give fairly good results. We offer bay bread to our guests specifically for their lunch meals for it is heavy, healthy and goes with many other dishes that can be served with it. Let’s now look the delicious recipe.


  • 1 and ½ Cups of Butter
  • 2/3 Cups of Corn Syrup
  • 4 Cups of Sugar
  • 2 Tsp of Maple Flavoring
  • 2/3 Cups of Honey
  • 3 Tablespoons of Corn Starch
  • 10 Cups of Rolled Oats
  • 1 and ½ Cups of Sliced Almond


Step 1: Take a large mixing bowl and add butter to it. Let it heat to get soft at a medium to high flame

Step 2: Now, add sugar to the butter and beat. Just beat it towards one side for around 1 minute. Then add honey, con syrup, maple flavoring and corn starch to it and beat the mixture again for half a minute

Step 3: Now, slowly add oats and almonds little by little and keep beating. You will get a crumbly dough

Step 4: Now, press the oats mixture firmly in the baking pan which would be around 15*10*1 inches in size.

Step 5: Then bake it in the oven at around 375 degrees Fahrenheit for around 20-25 minutes or until you get a light brown colored bar shaped, completely baked dish read.

Now cut the flat bread into 12 piece and you will get your tasty baked dish ready! Now that you know to prepare this tasty dish, doesn’t mean that Hudson doesn’t have much more to explore about.
